Any reason why he has the Spider logo on his back and chest on the covers, but never in the story?

I'm assuming it's because it's not 'Spider-man's' uniform nor has it nothing to do with Spider-man (except his father was 1 of the co-inventors). In the original black costume symbiote story Peter Parker 'wished' the spider in the uniform, and after that it stayed, in the ultimate version he just got 'stuck' with it for 1 night only.

Why have it on the covers then? Just marketability? Like someone wouldn't recognize him otherwise..?

your are probably right (marketability), from a marketability point, if you 'see' the spider in the uniform chances are that it will be recognized by more people than if it doesn't have it; and maybe in the future appearances of venom 'he' will incorporate the spider as a revenge thing against Peter Parker, who knows.
