I really haven't read too many Marvel comics since Peter davidson left Hulk. I just picked up Fantastic Four 55 and was surprised to see that Ben Grimm can now change back to his human form. How did this come to pass?

that's peter DAVID, son.

ben gained the ability from a cure he recieved from Gray Gargoyle's stoney curse. IIRC. and i might not. as recent as it was, those FF issues are a blur. the current little arc has started out well i must say, and the new mark waid looks good as well.
