I've been reading Ultimate X-Men since it started, and am currently getting the ultimate spider-man TPBs and the comics from #40 (first issue after vol. 6, correct me if I'm wrong). I also want to start collecting the Ultimates, but don't want to get ones I'll have to get in the TPB later, sooooo... Does anyone know what issue the second Ultimates TPB will end on? (if there is actually going to be one) That way, if it ends on #12 (for example) I won't bother collecting the issues until #13.

I think that #13 will be the first issue of the next story arc. With two months between solicitations and #12 already solicited, I'd guess that the solicitation for the next trade paperback will be out at the same time as the solicitation for the first issue in the next story arc.
I'm doing the switch too, having picked up USM with #40, UXM with #34, and plans to pick up Ultimates with the next story arc. I prefer the TPB format, but it's not worth running into spoilers all the time (since people are very justified in not including spoiler warnings about material published over three months ago.)
