What was the deal with Hank saying that bit about magazine covers with her 'putting her tounge down (cap's) throat' in ultimates #6. Did this happen off camera or what? And isn't that a bit out of Cap's character?

It happened off-panel. It also likely didn't happen quite the way Hank described it.

I couldn't have put it better myself. The Ultimate Cap seems more like a guy from the 1930's or 1940's who wouldn't think twice about giving a guy who'd caused so much trouble a kick in the face. I'm reminded of the John Wayne dialogue: 'Somebody should hit, but I won't . . . like hell I won't' (or words to that effect). This might offend our sensibilities today, but the portrayal of the Ultimate Cap seems like it captures that era pretty well.
